week 1, recipe 1. rosemary shortbread cookies
my inspiration for these delicious cookies came from my last trip to NYC. i went to to this place called blue bottle coffee in brooklyn (really good coffee), and they had rosemary basil shortbread cookies. they were AMAZING. so, i decided to recreate them. the only recipes i found were for rosemary shortbread, no basil. so i decided to forgo the basil, because, lets be serious - i can't just go off the recipe and start throwing basil around day one. to my surprise, they came out quite delicious!
Recipe:
1/2 cup butter, softened
1/3 cup powdered sugar
1 1/2 cups all purpose flour
2 tbs chopped fresh rosemary
1. Preheat oven to 325°F
2. Beat butter at medium speed w/ electric mixer until creamy
3. Gradually add sugar, beating well
4. Gradually add flour to butter mixer beating at a low speed until blended
5. Gently stir in rosemary
And that is it! Easy peasy. Recipe #1 = success!
