week 1, recipe 1. rosemary shortbread cookies
my inspiration for these delicious cookies came from my last trip to NYC. i went to to this place called blue bottle coffee in brooklyn (really good coffee), and they had rosemary basil shortbread cookies. they were AMAZING. so, i decided to recreate them. the only recipes i found were for rosemary shortbread, no basil. so i decided to forgo the basil, because, lets be serious - i can't just go off the recipe and start throwing basil around day one. to my surprise, they came out quite delicious!
Recipe:
1/2 cup butter, softened
1/3 cup powdered sugar
1 1/2 cups all purpose flour
2 tbs chopped fresh rosemary
1. Preheat oven to 325°F
2. Beat butter at medium speed w/ electric mixer until creamy
3. Gradually add sugar, beating well
4. Gradually add flour to butter mixer beating at a low speed until blended
5. Gently stir in rosemary
And that is it! Easy peasy. Recipe #1 = success!
the journey begins
i've never started a blog before, but i am making a new goal for myself (sort of like a mid-year resolution), which is to cook at least 1 new recipe a week. why embark on this most likely disastrous, messy, painful adventure? well, i hate to cook. my idea of cooking involves walking to the freezer, opening up whatever brand of frozen meal i have in there (usually healthy choice or lean cuisine), and sticking it in the microwave. i have zero patience for cooking. it takes too long, it makes a mess, and it is expensive. PLUS it is just me, so then i end up with leftovers rotting in the fridge. my turning point came when i realized that i've tried nearly every frozen meal in the freezer section, and, while heating up my frozen lunch in the microwave at work, my coworker told me my lunch looked like shit. and who wants to eat shit, right?
so, today starts the challenge. i will cook one new recipe. it will be my cooking and housewife training. because really, who wants to marry someone that isn't going to be cooking dinner for them every night? (kidding.)
